Bikini Recipe

Serves 10 guests

To make the Clementine Syrup (produces 750ml)

300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g granulated sugar

For the Cocktail (yields 850ml, to serve 10)

400ml decent vodka
100ml London dry gin
150ml peach liqueur
200ml citrus syrup (from the recipe above)
Whole cranberries, as a garnish
Mandarin essential oil, as a final touch

Method

Making the Citrus Syrup: Put the listed items in a pan, heat until it reaches a gentle boil, mixing so the sugar melts. Next, remove from the burner and leave to reach room temperature entirely. Pour to a clean bottle, close it and store in the fridge, it will last for up to four weeks.

Preparing the Premix: Combine the specified liquids into a sizeable container, leave to sit for an hour, then strain best through muslin, to ensure it's completely strained.

When ready to serve: Measure 85ml of your premix into a mixing glass containing ice, and agitate lightly for one minute to chill. Strain into a cold coupe glass or equivalent, top with a few cranberries and finish with a light spray with the mandarin essence above the glass.
